hey YO! I figured it was time for another tasty recipe to drop in y’alls lap. This time is another first for me, but a classic dish, beef stew. I was at work a few days ago and as I was walking aroung picking orders, the thought of making beef stew popped into my head. I am not sure if I saw it somewhere or maybe someone mentioned it but wither way I was excited about the idea. The universe must have been feeling me on the idea too! Aurelia and I went to visit mama at work and they just happened to have some of the ingredients paired together for a bundle sale, beef stew cubes, carrots and baby potatoes. SOLD!!
Sunday morning I laid out the ingredients and began to prep for the crockpot. I started with cutting up the onion, carrots and celery and set them to the side. I then took my glass mixing bowl and added in the flour and spices for the beef stew chunks. I fired up the stove top and added some olive oil to the pan. I tossed the beef in the flour mixture and began adding it to the pan, but not all of them. I did them in batches that way the beef wasn’t too overcrowded.
Once I had browned the beef stew chunks to my liking, I added a little more olive oil to the same pot and threw in the diced onions and cooked until the were soft. Now the masterpiece was about to come togetther. I began adding the carrots, celery, onions and mushrooms into the crockpot and then added more beef broth. Next came the V8 and the finishing spices. I turned the temp to high and we went on a hike. The house smelled amazing when we came home which was a good thing since we worked up an appetite. It was time for the last step, adding the peas. We let that stew for a little longer before I dished out the first bowl. Hot dog!! I love when a plan works out! This will be put into rotation at the Thompson household. Mmm, mm good. Beef Stew
Ingredients:
2 pounds of beef, chuck or stewing
3 tablespoons flour
1/2 teaspoon garlic powder
3 tablespoons olive oil
4 cups beef broth
1 white onion (chopped)
1 bag of baby potatoes (24 oz)
2 cups of carrots (cut into 1/2 inch pieces)
1 cup celery (cut into 1/2 inch pieces)
1 can of V8
1 tablespoon Worcestershire sauce
1 sprig fresh rosemary
1 package of baby bella mushrooms
1 teaspoon thyme
1 can of peas
1 teaspoon salt
1 teaspoon black pepper
Directions
Cut your celery, onion and carrots into the respective pieces and set aside. Combine the flour, garlic powder, salt and 1/2 teaspoon pepper into a mixing bowl. Toss the beef in the flour mixture.
Heat 2 tablespoons of olive oil in a large pan over meduim high. Add in a batch of beef and brown about 2 minutes each side. Once each batch is complete, place it in the slow cooker.
Reduce the heat to medium, add 1 tablespoon of olive oil and onions to the pan. Cook until tender. Add onion to the slow cooker.
Add 4 cups of beef broth along with the potatoes, carrots, celery, 3/4 can of V8, Worcestershire sauce, thyme, and 1/2 teaspoon black pepper. top with 2 sprigs of rosemary.
Cook on high for 4 to 5 hours, or on low for 8 to 9 hours. The beef should be tender. The last hour add in the can of peas. Serve with crackers or cornbread. Enjoy!!
