Hey YO! It’s time again for another delicious recipe! Spicy peanut chicken is on the menu. I’m starting to enjoy going out of my element and cooking new dishes for us. The inspiration for this dish came from, dun dun dun, a bag of hatch Chile peanuts from Sam’s Club. They caught my eye first thing in the morning and I did not hesitate to grab a bag. We have tried a few hatch Chile items and all have been very tasty. I got home later that afternoon and I hear Andrea in the kitchen, oh these look good, as she is ripping the bag open. After I got my first taste of them, the idea popped into my head, I need to make a chicken dish with these peanuts.

I started off with a glass bowl and started adding a few ingredients which included cornstarch, chicken broth, sugar, soy sauce, Kinder’s Red Garlic and white vinegar. After mixing everything together I added in chopped red peppers and set the bowl aside.

I then took one and a half boneless, skinless chicken breast and cut into cubes. I added a skillet on the stove with some olive oil, turned the temperature to medium and allowed it to warm up. Once the oil got hot enough I added in the chicken to the skillet followed by a pretty decent scoop of minced garlic and freshly grated ginger root. As the chicken began to turn white I then added a container of baby bella mushrooms. Let that cook for a couple minutes making sure to give it a stir from time to time. 

Now take the mixture that was set aside, give it another quick stir and add it the skillet. Let that cook for a couple minutes and then add the peanuts! I ended up adding a little bit more chicken broth since it became a little too thick.

Oh the aroma of this dish is amazing and will get your saliva glands flowing. I let the dish simmer for a few minutes while the brown rice finished up. I’m sure you can try different variations with this, maybe some broccoli or instead of rice go with some kind of noodles. After the rice finished, we put a couple scoops of rice and chicken mixture onto our plates, added some chopped green onions and dinner is served! Spicy Peanut Chicken

Ingredients:

1/4 cup chicken broth

1 tablespoon cornstarch

1 tablespoon sugar

2 tablespoons soy sauce

1 tablespoon white vinegar

1/4 teaspoon Kinder’s Red Garlic (or red pepper flakes)

1 tablespoon olive oil

1 pound boneless skinless chicken breast halves, cut into 3/4-inch pieces

1 tablespoon minced garlic

1 teaspoon grated ginger root

1 medium red bell pepper, cut into 3/4-inch pieces

1/3 cup peanuts

Green onions, sliced (2 tablespoons)

6 oz pack of baby bella mushrooms

 

Directions

Mix broth, cornstarch, sugar, soy sauce, white vinegar, red pepper pieces and Kinder’s Red Garlic; set aside.

Heat wok or 12-inch skillet over medium heat. Add oil; rotate to coat side. Add chicken, garlic and ginger root; stir. Add mushrooms after 2 minutes.

Cook about 3 minutes or until chicken is no longer pink in center. Add broth mixture to wok/skillet. Cook and stir about 1 minute or until sauce is thickened. Stir in peanuts. Sprinkle with green onions. 

Serve on top of brown rice and enjoy!
